Vietnamese and Cambodian cuisines are rich in flavour, reflecting their shared history and geographical proximity. Vietnamese food is known for its delicate balance of five key flavours—sweet, sour, salty, bitter, and umami—and emphasises fresh ingredients, minimal oil, and vibrant herbs. One of the most iconic dishes is phở, a fragrant noodle soup with beef or chicken and fresh herbs. Another staple is bánh mì, a baguette sandwich filled with various meats, pickled vegetables, and herbs, showcasing the influence of French colonialism.
Cambodian cuisine, while sharing some similarities with Vietnamese food, tends to focus on bold flavours, especially from fermented ingredients and coconut milk. A standout dish is amok, a coconut milk-based curry made with fish, turmeric, and lemongrass, often steamed in a banana leaf. Khmer red curry is another popular dish, typically milder than its Thai counterpart, and made with coconut milk, potatoes, and a variety of meats.
